Tricolour Subji

Thinking what to cook daily is a big task. Its just not only cooking, but taste, how to present and flavors....everything together will have to come together to make the dish a success. This is a subji i just landed up on my own.

I had very few vegetables, just a single carrot, capsicum and some chopped onions and tomatoes...and a wonder ingredient paneer... so thought what could i do...then viola!!! i made this wonderful subji...

This was a wonderful recipe and I really loved it
You will need:
  1. Carrots, Capsicum & Paneer - Each 1/2 cup(each cut length wise)
  2. Onion - Finely Chopped 1/2 cup
  3. Tomato - Finely Chopped 1/2 cup
  4. Jeer Powder, Dhaniya Powder, Garam Masala Powder - 1/2 Tsp
  5. Chille Powder - 1 Tsp
  6. Salt - to taste
  7. Ginger Garlic Paste (optional) - 1/2 Tsp
  8. Sugar - a pinch
  9. Oil - to fry
  10. Coriander leaves -  to garnish

How to go about it:
  1. Heat oil in a kadai.
  2. Add onions and fry until pink. Add Ginger Garlic paste and fry until the raw smell is gone.
  3. Add tomatoes and fry until the entire mixture in well combined. 
  4. Now, add the carrots and fry until they are almost half cooked. Sprinkle some water and cover with a lid for about 5 minutes.. The carrots should be cooked at the same time they should not be squishy.
  5. Take the lid off and add the capsicum and paneer and fry for few seconds.
  6. Now add all the dry spices and fry until everything combines well.
  7. Garnish with Coriander and serve hot with rotis or phulka.
