Puri & Meal Maker Subji (Soya Chunks with Puri)

Puri Channa and Puri Potato are the famous recipes. But, this.... is something that I really loved!!! My hubby is a crazy fanatic of Puri's... and it's been a long time that I made them too. Ofcourse, I wanted to make Channa masala. But, I forgot to soak them!!! phewwww!!! (secret is out!!!) So yesterday, I saw a small left out packet of Nutrella Soya Chunks and jumped with joy!! I gonna make puri but instead of channa, I will use these brown babies!!!

This basic masala is something I learnt from my mother....but to make it much more exciting I added few more ingredients and viola!!!! It turned out yummilicious!!!!



You will need:

  •  Soya chunks - 1 1/2 cup 
  • Oil - 3 Tbsp
  • Salt - to taste
  • Sugar - a pinch
  • Chilli Powder, Dhaniya Powder, Jeera Powder & Garam Masala - 1/2 tsp each
  • To Grind
    • Onion & Tomato - 2 each
    • Garlic - 2 pods
    • Cinnamon - a small stick
    • Star anise - small piece
    • Clove - 2 pods
    •  Coriander leaves - 4 - 5 strands
How to go about it
  • Take the Soya Chunks in a big bowl and pour boiling hot water. Let them soak for about 5 - 10 mins. Drain the water and wash them in running cold water. Squeeze them nice and dry and keep aside.

  • Take all ingredients to grind in a mixer or food processor and bring down to a smooth paste. Add about 1/4 cup or less water and grind.
  • In a kadai, heat oil and add the ground paste and cover immediately (you wouldn't want your entire kitchen to be splattered with the gravy!!!) 
  • Let the gravy cook for about 15 mins. You would be able to hear the spluttering sound of the gravy. 
  • Switch off the stove, remove the lid. The gravy would've become brown coloured. 
  • Now, add all the dry spices, except garam masala powder & salt. Cover and cook again for another 10 mins, so that there is no raw smell of the spices and the gravy.
  • Now add salt and garam masala powder, stir for a second or two and the soft soya chunks to the gravy.
  • Cover and simmer for 5 mins.
  • Server hot with roti's and the best combination hot hot puri's
